Peach Cobbler Banana Nice Cream

Ingredients

  • 3 medium360 gBananasliced into coins
  • 2½ medium360 gPeachessliced, half reserved fresh
  • ¼ cup (60 ml)60 gMilk, 2%
  • ½ cup120 gCottage cheese, 2%
  • 1 tbsp20 gMaple syrup
  • ¾ tsp3 gVanilla extract
  • ¾ tsp2 gGround cinnamon
  • ¼ tsp0.5 gGround nutmeg
  • ⅓ cup30 gOld-fashioned rolled oats
  • 3½ tbsp chopped24 gPecanschopped
  • 1 tsp5 gLemon juice

Steps

  1. Spread the banana and two-thirds of the peach slices in a single layer on a parchment-lined tray and freeze until solid, about 4 hours; keep the remaining third of the peach slices in the fridge.
  2. For the crumble, stir together the oats, pecans, half the maple syrup and half the cinnamon in a small bowl; let it sit while the fruit freezes so the oats soften slightly.
  3. Dice the reserved fresh peach slices and toss them with the lemon juice; set aside.
  4. Put the frozen banana and frozen peach slices in the blender with the milk, cottage cheese, the remaining half of the maple syrup, the vanilla, the remaining half of the cinnamon and the nutmeg.
  5. Blend, stopping to scrape down the sides, until thick and smooth like soft-serve, about 2 to 3 minutes.
  6. Scoop the nice cream into four bowls and top each with the diced lemony peach and the oat-pecan crumble. Serve right away, or freeze 30 minutes for a firmer scoop.
