Steps
- Preheat the oven to 350°F (175°C) and line a 12-cup muffin pan with paper liners.
- Make the filling first: beat the cream cheese, the unsweetened cocoa powder, about 40% of the powdered sugar and the milk until smooth. Chill while you make the batter. Set the remaining 60% of the powdered sugar aside for the glaze.
- In a large bowl, rub the lemon zest into the granulated sugar with your fingers until fragrant.
- Whisk the flour, baking powder, baking soda and salt into the zested granulated sugar.
- In another bowl, whisk the eggs, canola oil, yogurt, about 70% of the orange juice and the vanilla. Set the remaining 30% of the orange juice aside for the glaze.
- Fold the wet mixture into the dry mixture just until no streaks of flour remain.
- Divide the batter among the liners, filling each about two-thirds full.
- Bake 18 to 20 minutes, until a toothpick in the center comes out clean.
- Cool in the pan 5 minutes, then on a rack until completely cool, about 40 minutes.
- Cut a small cone from the top of each cupcake, spoon in the chilled cocoa filling, and replace the tops.
- For the glaze, whisk the reserved powdered sugar with the reserved orange juice until smooth, then drizzle over the cupcakes and let set 10 minutes.
