Steps
- Simmer the brown lentils in the water in a small pot for 25 minutes until tender, then drain well and let cool slightly.
- While the lentils cook, toast the walnuts in a dry skillet over medium heat for 4 minutes until fragrant, then chop finely.
- Heat half the olive oil in the same skillet over medium-high heat. Add the onion and cook 4 minutes, then add the mushrooms and cook 10 minutes, stirring, until their liquid evaporates and they brown.
- Stir the garlic, thyme, paprika and black pepper into the mushrooms and cook 1 minute. Add the soy sauce, stir, and take off the heat to cool for 5 minutes.
- In a bowl, roughly mash the lentils, then mix in the mushroom mixture, walnuts, egg and breadcrumbs. Shape into 4 patties about 3/4 inch thick.
- Wipe the skillet, heat the remaining half of the olive oil over medium heat and cook the patties 4 to 5 minutes per side until well browned and the centers reach 160°F (71°C).
- Toast the whole-wheat bread slices to use as buns.
- Build each burger on a toasted slice with romaine leaves, a patty, tomato slices and avocado, then top with a second slice.
