  • 3 medium45 gGreen onionsthinly sliced
  • 2 tbsp grated12 gFresh gingergrated
  • 3 cloves9 gGarlicminced
  • 2 tbsp30 gMiso paste
  • ¾ cup70 gOld-fashioned rolled oatspulsed into coarse crumbs
  • 1 large50 gEggsbeaten
  • ½ tsp1 gBlack pepper
  • 2 tbsp28 gCanola oildivided
  • 2 cups sliced200 gCucumberthinly sliced
  • ¼ cup60 gApple cider vinegar
  • ¼ cup60 gWater
  • 2 tsp8 gGranulated sugar
  • ¼ tsp2 gSalt
  • 2½ tbsp40 gYellow mustard
  • 5 cups chopped240 gRomaine lettucelarge leaves separated, washed and dried
  • 1½ medium200 gTomatoessliced

Steps

  1. Make the quick pickles first: stir the cider vinegar, water, sugar and salt in a bowl until dissolved, add the cucumber, and let stand at least 30 minutes while you make the patties.
  2. Heat one-third of the canola oil in a large skillet over medium-high heat. Add the mushrooms and cook 6–7 minutes until browned and dry; add the garlic and ginger for the last minute. Let cool 5 minutes.
  3. In a small bowl, whisk the miso paste into the beaten egg until smooth.
  4. In a large bowl, mash the tofu with the cooled mushroom mixture, then add the miso-egg mixture, the green onion, oats and black pepper and mix until it holds together. Rest 10 minutes so the oats absorb moisture.
  5. Shape the mixture into 8 patties about 1/2 inch thick.
  6. Wipe the skillet and heat half of the remaining canola oil over medium heat. Cook 4 patties 4–5 minutes per side until deeply golden and the centers reach 160°F (71°C). Repeat with the last of the canola oil and the remaining 4 patties.
  7. Lay 2 or 3 romaine leaves for each burger, add a patty, spread with the mustard, then top with the tomato slices and drained cucumber pickles. Serve two burgers per person.
