Maple Pecan Cinnamon Raisin Skillet Granola

Ingredients

  • 1¾ cups140 gOld-fashioned rolled oats
  • ⅓ cup chopped45 gPecansroughly chopped
  • ½ oz10 gChia seeds
  • 1 tbsp15 gOlive oil
  • 2½ tbsp50 gMaple syrup
  • 1½ tsp4 gGround cinnamon
  • ¼ tsp0.5 gGround nutmeg
  • ⅛ tsp1 gSalt
  • ⅓ cup50 gRaisins

Steps

  1. Before heating anything, chop the pecans and line a large plate or tray with parchment for cooling.
  2. In a small bowl, stir together the maple syrup, cinnamon, nutmeg and salt to make the glaze.
  3. Heat the olive oil in a large skillet over medium-low heat. Add the oats and pecans and toast, stirring often, for 6 to 8 minutes until fragrant and lightly golden.
  4. Stir in the chia seeds, then pour the maple glaze over the oat mixture and stir to coat every flake.
  5. Keep cooking, stirring and pressing the granola into the pan, for 4 to 6 minutes until it looks dry, glossy and deep golden; lower the heat if it darkens too fast.
  6. Turn off the heat and stir in the raisins so they warm and soften slightly.
  7. Spread the granola in a thin layer on the lined tray, press it gently, and let it cool completely, about 20 minutes, so it crisps.
  8. Break into small clusters and store in an airtight jar.
