Mango Chia Pudding Parfait with Pecan Oat Crunch

Ingredients

  • 2 cups (470 ml)480 gSoy milk, original
  • 2 oz60 gChia seeds
  • 2 tbsp40 gMaple syrupdivided
  • 1 tsp4 gVanilla extract
  • 1½ whole500 gMangodivided; part puréed, part diced
  • ½ lime, juiced20 gLime juice
  • 1½ cups120 gOld-fashioned rolled oats
  • ⅓ cup chopped40 gPecanschopped
  • 2 tbsp30 gAlmond butter, no salt added
  • 2¼ tsp10 gCanola oil
  • ¾ tsp2 gGround cinnamon
  • ½ tsp1 gGround ginger
  • ⅛ tsp1 gSalt

Steps

  1. Make the chia pudding first: in a bowl, whisk the soy milk, chia seeds, half of the maple syrup and the vanilla. Rest 5 minutes, whisk again to break up any clumps of chia seeds, then cover and chill at least 2 hours or overnight until thick.
  2. While the pudding chills, preheat the oven to 325°F (165°C) and line a baking sheet with parchment.
  3. For the oat crunch, stir the remaining half of the maple syrup with the almond butter, canola oil, cinnamon, ground ginger and salt in a bowl until smooth.
  4. Add the oats and pecans to the almond butter mixture and toss until every piece is coated. Spread on the baking sheet, pressing into a thin layer.
  5. Bake 15 to 18 minutes, stirring once halfway, until golden and fragrant. Cool completely on the sheet, about 15 minutes, so it crisps, then break into clusters.
  6. Prepare the mango: blend about two-fifths of the mango with the lime juice until smooth to make the purée. Dice the remaining three-fifths of the mango.
  7. Assemble in four glasses: spoon in half of the chia pudding, then half of the mango purée, then half of the diced mango. Repeat with the remaining half of the chia pudding, mango purée and diced mango.
  8. Top each parfait with the oat crunch just before serving so it stays crisp.
