Iced Oat Latte with Coffee Ice Cubes

Ingredients

  • 1 cup (240 ml)240 gBrewed coffeecooled
  • ½ cup40 gOld-fashioned rolled oats
  • 1½ cups360 gWatercold
  • a pinch0.3 gSalt
  • 4 shots120 gEspressofreshly brewed and hot
  • 1 tbsp packed16 gBrown sugar

Steps

  1. The night before, pour the cooled brewed coffee into an ice cube tray and freeze until solid, at least 6 hours.
  2. At the same time, put the oats in a jar with the cold water, cover and soak in the fridge overnight, about 8 hours.
  3. Next day, make the oat milk: pour the soaked oats and their soaking water into a blender, add the salt and blend for 30 seconds, just until smooth (longer blending makes it slimy).
  4. Strain the oat milk through a fine sieve or cloth into a pitcher, pressing gently; discard the pulp and keep the oat milk cold.
  5. Make the sweetened espresso: stir the brown sugar into the hot espresso until dissolved, then let it cool for 2 minutes.
  6. Divide the coffee ice cubes between two tall glasses, half in each.
  7. Pour half of the sweetened espresso over the cubes in each glass.
  8. Top each glass with half of the oat milk, stir and serve right away.
