Ingredients
- 1¼ cups (300 ml)300 gBrewed green teabrewed strong and chilled
- 1½ tbsp packed20 gBrown sugar
- 2 tbsp30 gWater
- ¾ cup (180 ml)200 gWhole milkcold
- 2½ tbsp (35 ml)40 gHeavy creamcold
- ½ tsp2 gVanilla extract
Steps
- Brew the green tea strong, then refrigerate it until cold, about 15 minutes, or use tea brewed ahead.
- Make the syrup first: in a small pot, warm the brown sugar with the water over medium heat, stirring until dissolved, about 2 minutes. Let the syrup cool for 10 minutes.
- Make the cold foam: in a jar, combine the heavy cream, the vanilla and half of the whole milk; seal and shake hard for 30 to 45 seconds until thick and foamy.
- Divide the brown sugar syrup between 2 tall glasses, about half in each, and fill the glasses with ice.
- Pour the chilled green tea over the ice, splitting it evenly, then add the remaining half of the whole milk, half to each glass.
- Spoon the cold foam on top, half per glass, and serve right away with a straw so each sip pulls tea up through the foam.
