Steps

  1. Prep first: dice the zucchini, slice the garlic, halve the cherry tomatoes, crumble the feta and chop the dill. Preheat the oven to 400°F (200°C).
  2. Heat half of the olive oil in a Dutch oven over medium-high heat. Add the ground turkey, the salt, the black pepper and the oregano and cook 5 minutes, breaking it up, until browned.
  3. Add the zucchini and cook 3 minutes. Lower the heat to medium, add the garlic and red pepper flakes and cook 1 minute until fragrant, not brown.
  4. Stir in the dry whole-wheat pasta, the water and the chicken broth. Bring to a boil, scraping up the browned bits.
  5. Cover the Dutch oven and bake 20 minutes, until the pasta is nearly tender and most of the liquid is absorbed.
  6. Uncover and stir in the spinach until wilted. Scatter the cherry tomatoes and feta over the top and drizzle with the remaining half of the olive oil.
  7. Bake uncovered 10 to 12 minutes, until the tomatoes blister, the pasta is tender and the turkey reaches 165°F (74°C).
  8. Rest 5 minutes, drizzle with the lemon juice, sprinkle with the dill and serve.
