- Prepare first: press the tofu 15 minutes, then crumble it; thaw the edamame; grate the carrot and ginger; mince the garlic; slice the green onions, white mushrooms, yellow onion and cucumber; separate the romaine leaves.
- Pulse the edamame in a food processor until coarsely chopped, then transfer to a bowl with the tofu, carrot, green onions, ginger, garlic, breadcrumbs, cornstarch, half of the soy sauce, the toasted sesame oil and the black pepper. Mix and squeeze until it holds together.
- Shape the mixture into 4 patties about 3/4 inch thick and chill them 10 minutes to firm up.
- Heat half of the canola oil in a large skillet over medium heat. Add the yellow onion and cook 8 minutes until soft and golden, add the mushrooms and cook 6 minutes more until browned, then stir in the remaining half of the soy sauce. Transfer the topping to a bowl and wipe out the skillet.
- Heat the remaining half of the canola oil in the skillet over medium heat. Cook the patties 4 to 5 minutes per side until deeply browned and heated through.
- Lay two or three romaine leaves per serving, add a patty, pile on the mushroom and yellow onion topping and the cucumber, sprinkle with the sesame seeds and wrap to eat.
