- 2 tsp10 gLemon juice

Steps
- Prepare toppings first: slice the avocado and toss it with the lemon juice; slice the tomato; crumble the feta; set out the spinach.
- In a bowl, gently mix the ground turkey with the garlic, oregano, paprika, salt and black pepper, then divide into 8 loose balls.
- Heat a large cast-iron skillet over medium-high heat. Toast the bread or buns cut side down until golden, about 1 minute, and set aside.
- Add half the olive oil to the skillet. Add 4 turkey balls and smash each flat with a sturdy spatula into thin patties. Cook 2 to 3 minutes until deeply browned, flip, and cook 2 minutes more until they reach 165°F (74°C).
- Top each pair of hot patties with half the feta so it softens, stack, and move to a plate. Add the remaining half of the olive oil and repeat with the remaining 4 balls and remaining feta.
- Build each burger: bottom bun, spinach, two stacked feta-topped patties, tomato, avocado, then the top bun. Serve warm.
