Steps

  1. Prepare everything first: slice the zucchini, chop the peanuts, slice the green onion, and peel the garlic and ginger.
  2. Make the herb sauce: blend or finely chop the cilantro, basil, mint, garlic and ginger with the lime juice, fish sauce, honey and half of the canola oil until smooth; set aside.
  3. Pour the boiling water over the rice noodles in a large bowl and soak until tender, 6 to 8 minutes; drain, rinse with cool water and drain well.
  4. Season the flank steak on both sides with the salt and black pepper.
  5. Heat one quarter of the canola oil in a large skillet over high heat. Sear the flank steak 4 to 5 minutes per side until it reaches 145°F (63°C) inside, then rest it on a board for at least 3 minutes.
  6. Add the remaining quarter of the canola oil to the same skillet and cook the zucchini over high heat, stirring occasionally, until browned in spots and just tender, 5 to 6 minutes.
  7. Turn off the heat, add the noodles to the skillet with the zucchini, pour in the herb sauce and toss to coat.
  8. Slice the flank steak thinly against the grain.
  9. Divide the saucy noodles and zucchini among 4 bowls, top with the steak, and finish with the green onion and peanuts.
