Steps
- Prep first: slice the onion, mince the garlic, grate the ginger, cut the green beans and bell pepper, quarter the mushrooms, chop the tomato and cilantro, and pat the shrimp dry.
- Bring the water to a boil in a saucepan, stir in the rice, cover and simmer on low for 18 minutes; rest off the heat, covered, while you cook the curry.
- Mix the cumin, coriander, turmeric, paprika and red pepper flakes in a small bowl to make the spice mix.
- Toss the shrimp with one third of the spice mix and one third of the salt.
- Heat half the canola oil in a large skillet over medium-high heat and sear the shrimp 1 to 2 minutes per side until just pink; move them to a plate (they finish later).
- Add the remaining half of the canola oil and the onion; cook 5 minutes until golden at the edges, then stir in the garlic and ginger for 30 seconds.
- Add the remaining two thirds of the spice mix and toast 30 seconds, then add the tomato and cook 3 minutes until it breaks down into a thick paste.
- Add the green beans, bell pepper, mushrooms and the remaining two thirds of the salt; stir-fry 6 to 8 minutes until the beans are crisp-tender and the pan is nearly dry.
- Return the shrimp and cook 1 to 2 minutes, tossing to coat, until pink and opaque and they reach 145°F (63°C).
- Stir in the lime juice, scatter with the cilantro and serve over the rice, fluffed with a fork.
