  • ⅓ cup85 gCanola oil
  • 2 tsp8 gVanilla extract
  • ¾ cup120 gSemisweet chocolate chipsdivided
  • 1 tbsp12 gGranulated sugar

Steps

  1. Preheat the oven to 400°F (200°C) and line a 12-cup muffin pan with paper liners.
  2. Grate the zucchini, wrap it in a clean towel and squeeze out as much liquid as you can; grate the carrot and set both aside.
  3. In a medium bowl, whisk the whole wheat flour, all-purpose flour, unsweetened cocoa powder, baking soda, baking powder, salt and cinnamon to make the dry mixture.
  4. In a large bowl, whisk the brown sugar, eggs, buttermilk, canola oil and vanilla until smooth, then stir in the zucchini and carrot to make the wet mixture.
  5. Add the dry mixture to the wet mixture and fold just until no dry streaks remain. Fold in most of the chocolate chips (about 100 g), saving the remaining 20 g for the tops.
  6. Divide the batter among the 12 cups, scatter the remaining chocolate chips over the tops, then sprinkle the granulated sugar evenly over each muffin.
  7. Bake 5 minutes at 400°F (200°C), then lower the oven to 350°F (175°C) and bake 13–15 minutes more, until a toothpick in the center comes out clean apart from melted chocolate.
  8. Cool in the pan 5 minutes, then move the muffins to a rack and cool at least 20 minutes before serving.
