  • 4¼ cups chopped200 gRomaine lettucelarge whole leaves, washed and dried
  • 1 whole200 gAvocadosliced

Steps

  1. Bring the water to a boil in a small pot, add the red lentils and simmer, stirring now and then, until soft and thick with no liquid left, 12 to 15 minutes. Spread on a plate to cool for 15 minutes.
  2. Meanwhile, heat one third of the canola oil in a large skillet over medium heat. Cook the onion until soft, about 5 minutes, then add the sweet potato, garlic and ginger and cook 4 minutes more until the sweet potato is tender.
  3. Stir the curry powder and cumin into the skillet and cook 30 seconds until fragrant. Scrape into a large bowl and wipe out the skillet.
  4. Pulse the oats in a blender until coarse, then add them to the bowl with the cooled lentils, the egg, the cilantro and the salt. Mix well and shape into 4 firm patties; chill 10 minutes if they feel soft.
  5. For the sauce, stir together the Greek yogurt, mint and lime juice in a small bowl.
  6. Heat the remaining two thirds of the canola oil in the skillet over medium heat. Cook the patties 4 to 5 minutes per side until deeply browned and crisp and the center reaches 160°F (71°C).
  7. Lay two or three romaine leaves for each wrap, add a patty, top with the tomato, avocado and a spoonful of the yogurt sauce, and fold the leaves around it to serve.
