- 1 container (6 oz)150 gPlain Greek yogurt, nonfat
- 2 tbsp30 gLime juice

- 2 cloves6 gGarlicminced
- 2 tsp4 gGround cumin
- 2 tsp2 gDried oregano
- 1¼ tsp3 gPaprika (sweet or smoked)
- 1 tbsp15 gCanola oil
- ½ tsp3 gSalt
Steps
- Bring the water to a boil in a small pot, add the brown rice, cover and simmer on low about 40 minutes until tender; rest 5 minutes covered.
- While the rice cooks, make the sauce: stir the Greek yogurt with half the lime juice, half the cilantro and a pinch from one third of the salt. Chill until serving.
- Toss the pork strips with the cumin, oregano, paprika, garlic and another third of the salt.
- Heat half the canola oil in a large skillet over medium-high heat. Sear the pork in one layer 3 to 4 minutes, turning, until it reaches 145°F (63°C); move to a plate and rest 3 minutes.
- Add the remaining canola oil to the skillet, then the onion and green bell pepper with the last third of the salt; cook 5 minutes until softened and browned at the edges.
- Stir in the pinto beans and cook 2 minutes until hot, then return the pork and drizzle with the remaining lime juice.
- Warm the flour tortillas in a dry skillet about 20 seconds per side.
- Fill each tortilla with brown rice, the pork mixture, romaine and a spoonful of the lime yogurt sauce, sprinkle with the remaining cilantro, fold in the sides and roll up tightly.
