Steps
- Rinse the potato matchsticks in a bowl of cold water, changing the water until it runs clear, then soak 10 minutes, drain well and pat very dry with a towel.
- While the potatoes soak, make the sauce: whisk the orange juice, lime juice, soy sauce, honey, cornstarch and red pepper flakes in a small bowl until smooth.
- Heat two-thirds of the canola oil in a large skillet over high heat until shimmering. Add the potatoes and stir-fry 6 to 8 minutes, until just tender with a little bite and lightly golden at the edges. Move them to a plate.
- Add the remaining one-third of the canola oil to the skillet. Add the yellow onion and stir-fry 2 minutes, then add the red bell pepper and green bell pepper and stir-fry 2 minutes more, until crisp-tender.
- Add the ginger and garlic and stir 30 seconds until fragrant, then add the edamame and stir-fry 2 minutes until hot.
- Return the potatoes to the skillet, stir the sauce again and pour it in. Toss 1 to 2 minutes until the sauce thickens and glazes everything.
- Turn off the heat, drizzle with the toasted sesame oil and toss. Serve topped with the green onions and sesame seeds.
