Steps

  1. Before you start, rinse the red lentils, cube the potatoes, chop the onion, mince the garlic, grate the ginger and cut the cod into pieces; keep the cod chilled until step 6.
  2. Heat the canola oil in a Dutch oven over medium heat. Add the onion and cook, stirring, for 6 minutes until soft and golden.
  3. Stir in the garlic, ginger, curry powder and turmeric and cook for 1 minute until fragrant, then stir in the tomato paste and cook 1 minute more.
  4. Add the red lentils, potatoes, water and half the salt. Bring to a boil, then cover, lower the heat and simmer for 20 minutes, stirring now and then, until the lentils break down and the potatoes are just tender.
  5. Stir in the coconut milk and return to a gentle simmer.
  6. Season the cod with the remaining half of the salt, nestle it into the curry, cover and simmer gently for 6 to 8 minutes, without stirring, until the fish flakes easily and reaches 145°F (63°C).
  7. Take the pot off the heat, drizzle in the lime juice, scatter the cilantro over the top and serve.
