Steps

  1. Before cooking, chop the onion, mince the garlic, grate the ginger, cut the cauliflower into florets and chop the cilantro.
  2. Heat the canola oil in a large, deep skillet with a lid over medium heat. Add the onion and cook, stirring, until soft and golden, about 8 minutes.
  3. Add the garlic and ginger and cook 1 minute. Stir in the curry powder, cumin and turmeric and toast 30 seconds until fragrant.
  4. Add the canned tomatoes, coconut milk, water and salt, stir, and bring to a simmer.
  5. Add the cauliflower, cover and simmer until just tender, about 12 minutes, stirring once or twice.
  6. Stir in the frozen peas and simmer uncovered 2 minutes so the sauce thickens slightly.
  7. Make 8 wells in the sauce with a spoon and crack one egg into each. Cover and cook on low until the whites are fully set and the yolks are firm, 8 to 10 minutes; egg dishes should reach 160°F (71°C).
  8. Turn off the heat, drizzle the lime juice over the curry and scatter the cilantro on top.
  9. While the eggs cook, warm the pita wedges in a dry pan or wrapped in foil on the lid, then serve them alongside the curry, two eggs per bowl.
