Steps
- Preheat the oven to 375°F (190°C) and line a 12-cup muffin pan with paper liners.
- Spread the walnuts on a baking sheet and toast in the oven for 6 to 8 minutes until fragrant; cool for 5 minutes. Set aside one quarter of the walnuts for the topping and keep the remaining three quarters for the batter.
- In a large bowl, whisk the whole wheat flour, all-purpose flour, unsweetened cocoa powder, baking soda, baking powder, salt and cinnamon.
- In a second bowl, whisk the eggs, yogurt, 100 g of the maple syrup, 75 g of the brown sugar, the canola oil and the vanilla until smooth.
- Pour the wet mixture into the dry mixture and stir just until no dry streaks remain.
- Gently fold the batter portion of the walnuts and the blueberries into the batter.
- For the topping, toss the reserved walnuts with the remaining 20 g of maple syrup and the remaining 15 g of brown sugar.
- Divide the batter among the muffin cups and spoon the walnut topping over each.
- Bake for 18 to 22 minutes, until a toothpick in the center comes out clean (a smear of berry is fine).
- Cool in the pan for 5 minutes, then move the muffins to a rack and cool at least 15 minutes before serving.
