  • ¼ tsp2 gSalt

  • 3 tbsp40 gCanola oil
  • 1¼ tsp5 gVanilla extract
  • ⅓ cup60 gDry-roasted peanuts, unsaltedcoarsely chopped
  • 1 tbsp12 gGranulated sugar

Steps

  1. Preheat the oven to 375°F (190°C) and line a 12-cup muffin tin with paper liners.
  2. Coarsely chop the dry-roasted peanuts and set them aside; all of the chopped dry-roasted peanuts go on top of the muffins.
  3. In a medium bowl, whisk together the flour, unsweetened cocoa powder, baking powder, baking soda and salt until no cocoa streaks remain.
  4. In a large bowl, whisk the peanut butter and brown sugar until smooth, then whisk in the eggs one at a time.
  5. Whisk the milk, canola oil and vanilla into the peanut butter mixture until smooth.
  6. Add the cocoa-flour mixture to the wet mixture and fold gently with a spatula just until no dry flour shows; a few lumps are fine.
  7. Divide the batter evenly among the 12 muffin cups, filling each about three-quarters full.
  8. In a small bowl, toss the chopped dry-roasted peanuts with the granulated sugar, then sprinkle this topping evenly over the muffins and press it in lightly.
  9. Bake 18 to 20 minutes, until the tops spring back and a toothpick inserted in the center comes out clean.
  10. Cool in the tin for 5 minutes, then move the muffins to a rack to cool for at least 15 minutes before serving.
