- 1 cup (240 ml)240 gButtermilk, low-fatroom temperature
- 3½ tbsp50 gCanola oil
- 2 tsp8 gVanilla extract
- 1¼ cups pitted180 gSweet cherrieshalved
- ½ cup whole70 gAlmondschopped
- 1 tbsp15 gGranulated sugar
Steps
- Preheat the oven to 400°F (200°C) and line a 12-cup muffin tin with paper liners.
- Chop the almonds and divide them: half for the batter and the remaining half for the topping. Halve the cherries.
- In a medium bowl, whisk the flour, unsweetened cocoa powder, baking powder, baking soda and salt until evenly combined.
- In a large bowl, whisk the almond butter and brown sugar until smooth, then whisk in the eggs one at a time, followed by the buttermilk, canola oil and vanilla.
- Add the cocoa-flour mixture to the almond butter mixture and fold with a spatula just until no dry streaks remain; a few lumps are fine.
- Gently fold in the cherries and the first half of the chopped almonds.
- Divide the batter among the muffin cups, filling them nearly to the top.
- In a small bowl, toss the remaining half of the chopped almonds with the granulated sugar and sprinkle this almond crunch over the muffins.
- Bake 5 minutes at 400°F (200°C), then lower the oven to 350°F (175°C) and bake 13 to 16 minutes more, until a toothpick in the center comes out clean (a smear of melted cherry is fine).
- Cool in the tin for 5 minutes, then move the muffins to a rack and cool at least 15 minutes before serving.
