Steps
- Prepare first: cut the broccoli into small florets, shred the cheddar, beat the egg, slice the green onion, mince the garlic and slice the tomato.
- Put the broccoli and the water in a large skillet, cover and steam over medium-high heat for 4 to 5 minutes until tender. Drain, spread on a towel to cool for 5 minutes, then chop finely. Wipe the skillet dry.
- In a large bowl, mash the great northern beans with a fork until mostly smooth.
- Add the chopped broccoli, cheddar, egg, breadcrumbs, green onion, garlic, paprika, black pepper and three-quarters of the salt to the beans and mix well. Shape into 4 patties about 3/4 inch thick.
- Heat half the olive oil in the skillet over medium heat. Toast the whole-wheat bread slices in the dry part of the pan or a toaster first if you like, then set aside.
- Cook the patties in the oil for 4 to 5 minutes until deeply golden. Add the remaining half of the olive oil, flip, and cook 4 to 5 minutes more until the centers reach 160°F (71°C).
- Meanwhile, mash the avocado with the lemon juice and the remaining quarter of the salt.
- Spread the avocado on 4 slices of the toasted bread, add a patty and the tomato slices, and top with the remaining 4 bread slices.
