  • 2½ tbsp40 gYellow mustard

Steps

  1. Make the quick pickles first: stir the cider vinegar, sugar and dill in a bowl until the sugar dissolves, add the cucumber and set aside for at least 30 minutes.
  2. Heat half of the olive oil in a large skillet over medium heat. Add the cauliflower and onion and cook, stirring, until tender and lightly browned, about 10 minutes. Add the garlic and cook 1 minute more. Let cool 5 minutes.
  3. Mash the white beans in a large bowl, leaving some texture. Add the cooked cauliflower mixture and mash briefly.
  4. Stir the egg, breadcrumbs, Parmesan, parsley, thyme, black pepper and salt into the bean mixture. Shape into 4 firm patties about 3/4 inch thick.
  5. Wipe the skillet, add the remaining half of the olive oil and heat over medium. Cook the patties 4 to 5 minutes per side until deeply golden and the center reaches 160°F (71°C).
  6. Drain the cucumber pickles. Lay out the romaine leaves in stacks, add a patty to each, spread with the mustard, and top with the tomato and pickles. Wrap and serve.
