Steps

  1. Preheat the oven to 425°F (220°C) and line a sheet pan with parchment.
  2. Make the quick pickles first: stir the cider vinegar and sugar in a bowl until dissolved, add the cucumber, and let it sit while you make the patties.
  3. Toss the cauliflower with half of the olive oil and roast for 20 minutes until tender and browned; let cool 5 minutes. Keep the oven on.
  4. In a large bowl, mash the chickpeas and roasted cauliflower with a fork until mostly smooth with some chunks.
  5. Stir in the red onion, garlic, parsley, cumin, smoked paprika, salt and black pepper, then the egg and breadcrumbs, until the mixture holds together.
  6. Shape into 4 patties about 3/4 inch thick and set them on the lined sheet pan; brush the tops with the remaining half of the olive oil.
  7. Bake 20 to 25 minutes, flipping halfway, until crisp and golden and the center reaches 160°F (71°C).
  8. Toast the whole-wheat bread slices while the patties finish, and drain the cucumber pickles.
  9. Spread the mustard on 4 toasted slices, top with the romaine, a patty and the pickles, then close with the remaining slices and serve.
