Steps
- Prepare everything first: rinse the lentils, cube the potatoes, cut the cauliflower into florets, dice the green bell pepper, chop the onion, mince the garlic, grate the ginger and chop the cilantro.
- Heat the canola oil in a Dutch oven over medium heat. Add the onion and cook, stirring, until soft and golden, 8 to 10 minutes.
- Add the garlic, ginger and green bell pepper and cook for 2 minutes. Stir in the cumin, coriander, turmeric and curry powder and toast for 1 minute until fragrant.
- Stir in the tomato paste and cook for 1 minute, then add the canned tomatoes and scrape up any browned bits.
- Add the lentils, potatoes, water and salt. Bring to a boil, then cover, lower the heat and simmer for 20 minutes, stirring now and then.
- Add the cauliflower, cover and simmer 12 to 15 minutes more, until the lentils, potatoes and cauliflower are tender and the curry has thickened; add a splash more water if it gets too thick.
- Turn off the heat and stir in the lemon juice. Ladle into bowls, top each with a spoonful of the yogurt and scatter over the cilantro.
