  • 4 cups loosely packed120 gBaby spinach
  • 1½ tbsp20 gCanola oil
  • 1½ tbsp10 gCurry powder
  • 1½ tsp3 gGround cumin
  • ½ tsp1 gGround cinnamon
  • ¾ tsp5 gSalt
  • ½ tsp1 gBlack pepper
  • ½ lime, juiced20 gLime juice
  • ⅔ cup chopped10 gFresh cilantrochopped

Steps

  1. Prepare first: cube the beef chuck, dice the onion, mince the garlic, grate the ginger, and peel and chunk the potatoes. Keep the potatoes in a bowl of cold water until needed.
  2. Pat the beef chuck dry and season it with half of the salt and the black pepper.
  3. Heat half of the canola oil in a Dutch oven over medium-high heat. Brown the beef chuck in two batches, about 4 minutes per batch, and transfer it to a plate.
  4. Lower the heat to medium and add the remaining half of the canola oil. Cook the onion for 5 minutes until soft, then add the garlic and ginger and cook 1 minute.
  5. Stir in the curry powder, cumin, cinnamon and tomato paste and cook for 1 minute until fragrant and darkened.
  6. Pour in the beef broth and coconut milk, scraping up the browned bits. Return the beef chuck and its juices to the pot.
  7. Bring to a simmer, cover, and cook gently on low for 1 hour 15 minutes, stirring now and then.
  8. Drain the potatoes and stir them into the pot with the remaining half of the salt. Cover and simmer 30 minutes more, until the potatoes and beef are fork-tender (well past 145°F (63°C)).
  9. Uncover, stir in the spinach until wilted, and simmer 3 minutes to thicken the sauce slightly.
  10. Turn off the heat, stir in the lime juice, and serve topped with the cilantro.
