- ¼ cup60 gWater
- 1¼ tsp3 gPaprika (sweet or smoked)smoked
- 1½ tsp3 gGround cumin

Steps
- Make the salsa first: in a bowl, stir together the tomato, red onion, jalapeño, cilantro, lime juice and one third of the salt. Set aside.
- Heat half of the olive oil in a large skillet over medium heat. Add the sweet potato, the smoked paprika, half of the cumin and another third of the salt; stir to coat.
- Add the water, cover and cook 8 minutes, then uncover and cook 4 to 5 minutes more, stirring, until the sweet potato is tender and lightly browned.
- Stir the black beans into the sweet potato and cook 2 minutes until hot. Transfer the mixture to a bowl and wipe out the skillet.
- Whisk the eggs with the remaining cumin, the remaining third of the salt and the black pepper.
- Heat the remaining half of the olive oil in the skillet over medium-low heat. Add the eggs and stir gently until soft curds form and they are fully set, 160°F (71°C).
- Warm the tortillas in a dry skillet about 20 seconds per side.
- Divide the eggs, the sweet potato and bean mixture, the cheddar and the salsa among the tortillas. Fold in the sides, roll up tightly and serve, with any leftover salsa on the side.
