  • 2 medium240 gBananavery ripe, mashed
  • 1 cup sliced180 gStrawberriesdiced small
  • 1½ cups180 gAll-purpose flour
  • 2 large100 gEggsat room temperature
  • ¼ cup80 gHoney
  • 3½ tbsp packed50 gBrown sugar
  • ⅓ cup70 gCanola oil
  • 1¼ tsp5 gVanilla extract
  • 1¾ tsp8 gBaking powder
  • ¾ tsp3 gBaking soda
  • ¾ tsp2 gGround cinnamon
  • ½ tsp3 gSalt
  • 1 tbsp12 gGranulated sugar

Steps

  1. Set aside 20 g of the oats for the topping. Stir the remaining 120 g of oats into the milk in a large bowl and let soak 20 minutes to soften.
  2. Meanwhile, heat the oven to 375°F (190°C) and line a 12-cup muffin pan with paper liners.
  3. In a medium bowl, whisk the flour, baking powder, baking soda, cinnamon and salt to make the dry mix.
  4. Pat the strawberries dry and toss them with 1 tablespoon of the dry mix so they don't sink; keep the rest of the dry mix for the batter.
  5. To the soaked oats, whisk in the mashed banana, eggs, honey, brown sugar, canola oil and vanilla until smooth.
  6. Add the rest of the dry mix and fold just until no dry streaks remain, then gently fold in the floured strawberries.
  7. Divide the batter among the 12 cups.
  8. In a small bowl, stir the reserved oats with the granulated sugar, then sprinkle this topping evenly over the muffins.
  9. Bake 20–23 minutes, until the tops are golden and a toothpick in the center comes out clean.
  10. Cool in the pan 5 minutes, then move the muffins to a rack and cool at least 15 minutes before serving.
