- 1¼ cups160 gAll-purpose flour
- 1¼ tsp6 gBaking powder
- ¾ tsp4 gBaking soda

- ¾ tsp2 gGround cinnamon
- 2 large100 gEggsroom temperature
- ½ cup packed110 gBrown sugarpacked
- ⅓ cup70 gCanola oil
- 1¼ tsp5 gVanilla extract
- ¾ cup120 gSemisweet chocolate chips
- 1 tbsp12 gGranulated sugar
Steps
- Preheat the oven to 400°F (200°C) and line a 12-cup muffin tin with paper liners.
- Divide the oats: set aside about one-sixth of the oats for the topping. Stir the remaining five-sixths of the oats with the buttermilk in a medium bowl and let soak for 15 minutes while you prepare the rest.
- In a large bowl, whisk the flour, baking powder, baking soda, salt and cinnamon.
- In another bowl, mash the banana, then whisk in the egg, brown sugar, canola oil and vanilla until smooth. Stir in the soaked oat and buttermilk mixture.
- Pour the banana mixture into the flour mixture and fold gently until just a few streaks of flour remain. Fold in the chocolate chips; do not overmix.
- Divide the batter evenly among the 12 cups, filling them nearly to the top.
- For the topping, stir the reserved oats with the granulated sugar and sprinkle the oat-sugar mixture evenly over the muffins.
- Bake for 5 minutes at 400°F (200°C), then lower the heat to 350°F (175°C) and bake 13 to 15 minutes more, until domed, golden and a toothpick in the center comes out clean (melted chocolate is fine, but no wet batter).
- Cool in the tin for 5 minutes, then move the muffins to a rack and cool at least 15 minutes more before serving.
