- 1¼ cups (300 ml)280 gSkim milk
- ¼ tsp2 gSalt
- 2½ tsp12 gUnsalted buttermelted
- 2¼ tsp10 gOlive oil
- 3 cloves9 gGarlicminced
- 8⅓ cups loosely packed250 gBaby spinach
- 1 cup250 gPart-skim ricotta
- ½ cup leaves12 gFresh basilchopped
- ¼ tsp0.5 gGround nutmeg
- ½ tsp1 gBlack pepper
- 1 cup240 gMarinara sauce
- 3 oz80 gPart-skim mozzarellashredded
Steps
- Blend the oats in a blender until they are a fine flour. Add the eggs, skim milk, half the salt and the melted butter, and blend until smooth. Let the batter rest 10 minutes.
- Meanwhile, heat half the olive oil in a large nonstick skillet over medium heat. Cook the garlic 30 seconds, add the spinach and cook until wilted, about 3 minutes. Transfer to a sieve, press out the liquid, and chop.
- In a bowl, stir together the ricotta, chopped spinach, half the basil, the nutmeg, black pepper and the remaining half of the salt.
- Wipe the skillet, brush it with a little of the remaining olive oil and heat over medium. Pour in about 1/4 cup batter and swirl thin. Cook until the edges lift, about 1 minute, flip and cook 30 seconds until set. Repeat with the rest of the batter, brushing the pan with the remaining olive oil as needed, to make 8 crêpes.
- Preheat the oven to 400°F (200°C). Spread half the marinara sauce over the bottom of a baking dish.
- Spoon the ricotta filling down each crêpe, roll up, and lay seam side down over the marinara sauce. Spoon the remaining half of the marinara sauce over the crêpes and sprinkle with the mozzarella.
- Bake 15 minutes until the mozzarella bubbles and the center is hot. Scatter with the remaining half of the basil and serve 2 crêpes each.
