  • ½ tsp1 gCrushed red pepper
  • 2 tbsp30 gLemon juice
  • 2 tsp4 gLemon zest
  • ⅓ cup grated40 gGrated Parmesandivided
  • ¼ cup30 gPlain dry breadcrumbs
  • ¼ cup chopped15 gFresh parsleychopped
  • ¾ tsp5 gSaltdivided
  • ½ tsp1 gBlack pepper

Steps

  1. Preheat the oven to 400°F (200°C) and lightly oil a 9x13-inch baking dish with a little of the olive oil from the first portion below.
  2. Bring the water to a boil in a large pot with half of the salt. Add the pasta and cook 2 minutes less than the package says. Add the broccoli for the last 2 minutes. Drain, saving 1/2 cup of the cooking water.
  3. While the pasta cooks, warm two-thirds of the olive oil in a small skillet over low heat. Add the garlic and red pepper flakes and cook 2 to 3 minutes until the garlic is pale gold; remove from the heat and stir in the lemon juice and lemon zest.
  4. Toss the pasta and broccoli in the baking dish with the garlic oil, the saved cooking water, half of the parmesan and the black pepper.
  5. Season the salmon with the remaining salt and nestle the pieces into the pasta.
  6. In a small bowl, mix the breadcrumbs with the remaining half of the parmesan and the remaining one-third of the olive oil. Scatter this topping over the dish.
  7. Bake uncovered 18 to 22 minutes, until the topping is golden and the salmon flakes easily and reaches 145°F (63°C) inside.
  8. Rest 5 minutes, sprinkle with the parsley and serve.
