  • 2 tbsp30 gTomato paste
  • ¾ cup leaves20 gFresh basiltorn, divided
  • 1 tsp1 gDried oregano
  • ¼ tsp0.5 gCrushed red pepper
  • 1½ tbsp20 gOlive oildivided
  • 4 oz110 gPart-skim mozzarellashredded
  • 3 tbsp grated20 gGrated Parmesan
  • ½ tsp3 gSaltdivided
  • ½ tsp1 gBlack pepper
  • 12⅔ cups3,000 gWaterfor boiling the pasta

Steps

  1. Preheat the oven to 400°F (200°C).
  2. Bring the water to a boil in a large pot with one third of the salt. Add the pasta and cook 2 minutes less than the package says, so it stays firm. Drain and set aside.
  3. Meanwhile, heat half the olive oil in a large oven-safe skillet over medium-high heat. Season the chicken thighs with one third of the salt and the black pepper, then brown them 5 to 6 minutes until they reach 165°F (74°C) inside. Move the chicken to a plate.
  4. Add the remaining half of the olive oil to the skillet, then the mushrooms. Cook 6 to 8 minutes until browned and their liquid cooks off. Add the onion and cook 4 minutes until soft.
  5. Stir in the garlic, oregano and red pepper flakes for 30 seconds, then the tomato paste for 1 minute.
  6. Add the canned tomatoes and the remaining third of the salt. Simmer 10 minutes until slightly thickened, then stir in half the basil.
  7. Stir the drained pasta and the chicken into the sauce. Scatter the mozzarella and parmesan over the top.
  8. Bake 20 minutes until bubbling and the cheese is golden in spots.
  9. Rest 5 minutes, then top with the remaining half of the basil and serve.
