  • 2 large100 gEggsroom temperature
  • 1¼ tsp5 gVanilla extract
  • 1½ medium250 gApplepeeled and diced small
  • ⅓ cup chopped40 gWalnutschopped

Steps

  1. Make the filling first: in a small saucepan, stir the strawberries, 50 g of the granulated sugar (about a third), the cornstarch and the lemon juice. Cook over medium heat, stirring, until bubbling and thick, about 6 minutes. Spread on a plate and cool 20 minutes.
  2. Preheat the oven to 350°F (175°C) and grease and line a 9x9-inch pan with parchment.
  3. In a bowl, whisk the flour, baking powder, baking soda, salt, cinnamon and nutmeg.
  4. In a large bowl, whisk the applesauce, the remaining 120 g of granulated sugar, 70 g of the brown sugar (most of it), the canola oil, the egg and the vanilla until smooth.
  5. Fold the flour mixture into the applesauce mixture until just combined, then fold in the apple.
  6. Spread half the batter in the pan. Spoon the cooled strawberry filling over it, leaving a small border, then cover with the remaining half of the batter.
  7. Mix the walnuts with the remaining 30 g of brown sugar and scatter over the top.
  8. Bake 45 to 50 minutes, until a toothpick in the center comes out clean of cake batter (a little jammy filling is fine).
  9. Cool in the pan on a rack at least 45 minutes so the filling sets, then cut into 12 slices.
