Steps
- In a large bowl, stir 110 g of the oats into the buttermilk and let soak for 20 minutes to soften; set the remaining 20 g of oats aside for the topping.
- Meanwhile, preheat the oven to 400°F (200°C) and line a 12-cup muffin tin with paper liners.
- Make the topping: in a small bowl, mix the remaining 20 g of oats, the pecans, 20 g of the brown sugar, a quarter of the cinnamon and the melted butter until crumbly.
- Make the dry mix: in a medium bowl, whisk the whole wheat flour, the all-purpose flour, the baking powder, the baking soda, the salt and the remaining three-quarters of the cinnamon.
- To the soaked oats, whisk in the eggs, the remaining 100 g of brown sugar, the canola oil and the vanilla, then stir in the grated apple.
- Add the dry mix to the oat mixture and fold just until no dry streaks remain; gently fold in the blueberries.
- Divide the batter among the muffin cups and sprinkle the oat-pecan topping evenly over each.
- Bake 18 to 22 minutes, until golden and a toothpick inserted in the center comes out clean.
- Cool in the tin for 5 minutes, then move the muffins to a rack to cool at least 15 minutes before serving.
