- 5 cups loosely packed150 gBaby spinachroughly chopped
- 7 oz200 gPart-skim mozzarellashredded
- ⅓ cup grated30 gGrated Parmesan
- ½ tsp1 gCrushed red pepper
- ½ cup leaves10 gFresh basiltorn
Steps
- Make the dough: in a large bowl, whisk the bread flour, whole wheat flour, instant yeast and 9 g of the salt (keep the remaining 2 g for the sauce and eggplant). Add the lukewarm water and 10 g of the olive oil and stir into a sticky, shaggy dough. This is about 75% hydration and 2% salt.
- Rest the dough 15 minutes, then knead in the bowl with wet hands or on a lightly oiled counter for 6 to 8 minutes until smoother and stretchy. Cover and let rise at about 75°F (24°C) for 1 to 1½ hours, until doubled in size.
- Coat two 10-inch cast-iron skillets or 9x13-inch metal pans with 10 g of the olive oil each (20 g total). Divide the dough in half, place one piece in each pan and press toward the edges; if it springs back, rest 10 minutes and press again. Cover and proof at about 75°F (24°C) for 45 to 60 minutes, until puffy and it springs back slowly when poked.
- While the dough rises, make the sauce: heat 10 g of the olive oil in a saucepan over medium heat, add half of the garlic for 30 seconds, then add the cherry tomatoes, oregano and 1 g of the salt. Cook 15 minutes, mashing as they burst, until thick and jammy. Let cool.
- Preheat the oven to 450°F (230°C). Toss the eggplant with the remaining 20 g of olive oil and the last 1 g of salt on a baking sheet and roast 20 to 25 minutes, turning once, until soft and browned.
- Toss the spinach with the remaining half of the garlic. Raise the oven to 475°F (245°C) and move a rack to the lowest position.
- Spread half the sauce over each dough, leaving a thin border. Top each with half the mozzarella, half the garlic spinach and half the roasted eggplant, then sprinkle half the Parmesan over each.
- Bake 18 to 22 minutes, until the cheese bubbles, the edges and bottom are deep golden and the crust reaches 200–210°F (93–99°C) in the center.
- Sprinkle the red pepper flakes and basil over the pizzas. Rest in the pans 5 minutes, then move to a rack to cool 5 minutes more so the bottoms stay crisp. Cut each pizza into 6 slices.
