  • 3½ oz100 gPlain Greek yogurt, nonfat
  • ¾ cup chopped100 gWalnutschopped
  • 1⅛ tsp5 gBaking soda
  • ¾ tsp3 gBaking powder
  • ½ tsp3 gSalt
  • 1⅛ tsp3 gGround cinnamon
  • ½ tsp1 gGround nutmeg
  • 1¼ tsp5 gVanilla extract
  • 1 tsp5 gUnsalted buttersoftened, for the pan

Steps

  1. Preheat the oven to 350°F (175°C). Grease a 9x5-inch loaf pan with the butter.
  2. Spread the walnuts on a baking sheet and toast in the oven for 6 to 8 minutes until fragrant; let cool. Set aside one quarter of the walnuts for the topping and keep the remaining three quarters for folding in.
  3. In a medium bowl, whisk together the whole wheat flour, the all-purpose flour, baking soda, baking powder, salt, cinnamon and nutmeg. This is the dry mix.
  4. In a large bowl, mash the banana, then whisk in the honey, canola oil, eggs, Greek yogurt and vanilla until smooth. This is the wet mix.
  5. Add the dry mix to the wet mix and stir with a spatula just until no dry streaks remain.
  6. Fold in the three quarters of the walnuts set aside for folding in, then scrape the batter into the pan and smooth the top.
  7. Toss the reserved quarter of the walnuts with the oats and scatter over the batter, pressing lightly.
  8. Bake for 55 to 65 minutes, tenting with foil after 40 minutes if the top browns quickly, until a toothpick in the center comes out clean.
  9. Cool in the pan on a rack for 15 minutes, then turn out and cool completely on the rack, about 1 hour, before cutting into 12 slices.
