- 4 oz120 gPlain Greek yogurt, nonfat
- 2 tbsp30 gLime juice

Steps
- Make the avocado sauce first: blend or mash the avocado, Greek yogurt, lime juice, cilantro and water until smooth; chill until serving.
- Heat half of the olive oil in a large skillet over medium heat. Add the onion and cook 4 minutes until soft.
- Add the sweet potato, garlic, cumin, chili powder and salt; cook, stirring, 8 to 10 minutes until the sweet potato is tender.
- Stir in the kale and cook 2 minutes until wilted. Fold in the black beans, then transfer the filling to a bowl and wipe out the skillet.
- Lay out the tortillas. Spread the filling over half of each, top with the cheddar, and fold closed.
- Brush the skillet with some of the remaining olive oil over medium heat. Cook the quesadillas two at a time, 2 to 3 minutes per side, until golden and the cheese melts, using the rest of the oil for later batches.
- Cut each quesadilla into wedges and serve with the avocado sauce.
