Steps

  1. Preheat the oven to 375°F (190°C) and line a 12-cup muffin tin with paper liners.
  2. Make the streusel first: in a small bowl, stir the streusel portion of the brown sugar (25 g), the streusel portion of the walnuts (30 g) and the streusel portion of the cinnamon (1 g) with the melted butter until crumbly. Set aside.
  3. In a medium bowl, whisk the flour, baking soda, baking powder, salt, the batter portion of the cinnamon (4 g), the ground ginger, nutmeg and cloves.
  4. In a large bowl, whisk the pumpkin, the batter portion of the brown sugar (125 g), the eggs, canola oil, milk and vanilla until smooth.
  5. Add the flour mixture to the pumpkin mixture and fold just until no dry streaks remain; a few lumps are fine.
  6. Fold in the batter portion of the walnuts (60 g).
  7. Divide the batter evenly among the 12 muffin cups and sprinkle the streusel over the tops.
  8. Bake 20 to 22 minutes, until the tops spring back and a toothpick inserted in the center comes out clean.
  9. Cool in the tin for 5 minutes, then move the muffins to a rack and cool at least 15 minutes before serving.
