- ⅓ cup90 gCanola oil
- ¼ cup (60 ml)60 gButtermilk, low-fat
- 1¼ tsp5 gVanilla extract

- ¾ tsp3 gBaking powder
- ¾ tsp4 gSalt
- 2¼ tsp6 gGround cinnamondivided
- 1⅛ tsp2 gGround ginger
- ½ tsp1 gGround nutmeg
- ¼ tsp0.5 gGround cloves
Steps
- Heat the oven to 350°F (175°C). Grease a 9x5-inch loaf pan and line it with a strip of parchment.
- Make the topping first: in a small bowl, stir 10 g (one-sixth) of the granulated sugar with 1 g (one-sixth) of the cinnamon. Set aside.
- In a medium bowl, whisk the flour, baking soda, baking powder, salt, ground ginger, nutmeg, cloves and the remaining 5 g of cinnamon.
- In a large bowl, whisk the pumpkin, brown sugar, the remaining 50 g of granulated sugar, the eggs, canola oil, buttermilk and vanilla until smooth.
- Add the flour mixture to the pumpkin mixture and fold with a spatula just until no dry streaks remain; do not overmix.
- Scrape the batter into the pan, smooth the top and sprinkle the cinnamon-sugar topping evenly over it.
- Bake 60 to 70 minutes, until a toothpick inserted in the center comes out clean. Tent with foil after 45 minutes if the top browns too fast.
- Cool in the pan 10 minutes, then lift out and cool completely on a rack, about 1 hour, before cutting into 12 slices.
