Spiced Blueberry Swirl Snack Cake

Ingredients

  • 2 cups300 gFrozen blueberries, unsweetened
  • 1 cup200 gGranulated sugardivided
  • 1½ tbsp12 gCornstarch
  • 1 tbsp15 gLemon juice
  • 2 cups250 gAll-purpose flour
  • 1¾ tsp8 gBaking powder
  • ¾ tsp3 gBaking soda
  • ½ tsp3 gSalt
  • 1 tbsp8 gGround cinnamondivided
  • 1 tsp2 gGround cardamom
  • ½ tsp1 gGround nutmeg
  • ½ cup113 gUnsalted buttermelted and slightly cooled, plus a little for the pan
  • 2 large100 gEggsat room temperature
  • 1 cup (240 ml)240 gButtermilk, low-fatat room temperature
  • 2 tsp8 gVanilla extract

Steps

  1. Make the berry filling first: in a small saucepan, stir together the blueberries, 30 g of the sugar, the cornstarch and the lemon juice. Cook over medium heat, stirring, for 6–8 minutes until bubbling and thick. Spread on a plate and let cool for 15 minutes.
  2. While the filling cools, heat the oven to 350°F (175°C). Lightly grease a 9x9-inch pan with a little of the butter and line it with parchment.
  3. In a medium bowl, whisk the flour, baking powder, baking soda, salt, 6 g of the cinnamon (three quarters), the cardamom and the nutmeg.
  4. In a large bowl, whisk 150 g of the sugar with the remaining melted butter, then whisk in the eggs one at a time, followed by the buttermilk and the vanilla until smooth.
  5. Fold the flour mixture into the buttermilk mixture just until no dry streaks remain.
  6. Spread two thirds of the batter in the pan. Spoon the cooled berry filling over it in an even layer, leaving a small border, then dollop the remaining third of the batter on top and gently spread to mostly cover.
  7. In a small bowl, mix the remaining 20 g of sugar with the remaining 2 g of cinnamon and sprinkle it evenly over the top.
  8. Bake for 40–45 minutes, until golden and a toothpick inserted in the cake part comes out clean.
  9. Cool in the pan on a rack for at least 30 minutes so the filling sets, then lift out and cut into 12 slices.
