- 1¾ cups chopped200 gPecanshalves
- ¼ tsp1.5 gSaltfine
Steps
- Heat the oven to 350°F (175°C) and spread the pecans on a rimmed baking sheet in one layer.
- Toast the pecans for 8 to 10 minutes, stirring once, until fragrant and a shade darker; watch closely so they don't scorch.
- Let the pecans cool for about 10 minutes until just warm, which helps them release their oil without overheating the machine.
- Put the warm pecans in a powerful blender or food processor and blend for 1 minute until they become a coarse meal.
- Scrape down the sides and keep blending in 1-minute bursts, scraping between bursts, for 4 to 6 minutes until the pecans turn into a smooth, glossy, pourable butter.
- Add the salt and blend for 20 seconds more to mix it in evenly.
- Spoon the pecan butter into a clean jar; it thickens as it cools. Spread on toast or swirl into oatmeal, and keep it in the fridge for up to 3 weeks.
