  • 1 lb450 gShrimpchopped into bite-size pieces
  • 8 tortillas392 gFlour tortillas, 8-inch
  • 1 cup shredded110 gCheddar cheeseshredded
  • 1 cup136 gCorn kernels, frozenthawed
  • 2 cups loosely packed60 gBaby spinachroughly chopped
  • 2 medium30 gGreen onionsthinly sliced
  • 2 cloves6 gGarlicminced
  • 1¾ tsp4 gPaprika (sweet or smoked)smoked
  • 1 tsp2 gGround cumin
  • 1 tbsp16 gCanola oil
  • 1 container (6 oz)170 gPlain Greek yogurt, nonfat
  • 2 tbsp30 gLime juice
  • ½ cup chopped8 gFresh cilantrochopped
  • ¼ tsp2 gSalt

Steps

  1. Make the sauce: stir the Greek yogurt, lime juice, cilantro and about a quarter of the salt in a small bowl; chill until serving.
  2. Toss the shrimp with the paprika, cumin, garlic and the remaining three-quarters of the salt.
  3. Heat half the canola oil in a large skillet over medium-high heat. Cook the shrimp 3 to 4 minutes, stirring, until pink and opaque.
  4. Add the thawed frozen corn kernels and the spinach to the shrimp and cook about 1 minute, until the corn is hot and the spinach wilts. Transfer the filling to a bowl, stir in the green onion, and wipe out the skillet.
  5. Lay out the flour tortillas. Sprinkle half of each with the cheddar, then the shrimp and corn filling, dividing both evenly among the 8 tortillas, and fold each in half.
  6. Brush the skillet with a little of the remaining half of the canola oil over medium heat. Cook the quesadillas two at a time, 2 to 3 minutes per side, until golden and the cheese melts, using the rest of that oil across the batches.
  7. Cut each quesadilla into wedges and serve 2 per person with the yogurt lime sauce for dipping.
