  • 1½ tbsp20 gOlive oil
  • 1¾ tsp4 gPaprika (sweet or smoked)
  • 1 tsp2 gGround cumin
  • ½ tsp3 gSalt
  • ½ tsp1 gBlack pepper

Steps

  1. Preheat the oven to 425°F (220°C) and line a sheet pan with parchment.
  2. Toss the bell pepper, jalapeño, red onion and garlic with half the olive oil and spread them on one side of the pan.
  3. Rub the salmon with the paprika, cumin, half the salt and the black pepper and set it on the other side of the pan.
  4. Roast 12 to 15 minutes, until the salmon flakes and reaches 145°F (63°C) and the peppers are charred at the edges. Move the salmon to a plate and keep roasting the vegetables 5 more minutes if they need more color.
  5. For the salsa, chop the roasted bell pepper, jalapeño, red onion and garlic finely, then stir in the lime juice, half the cilantro and the remaining half of the salt.
  6. Flake the salmon into chunks.
  7. Brush one side of each corn tortilla with the remaining half of the olive oil and lay half of them oiled side down on the sheet pan.
  8. Spread the black beans over those tortillas, top with the salmon and queso fresco, then cover with the remaining tortillas, oiled side up.
  9. Bake at 425°F (220°C) for 8 to 10 minutes, flipping halfway, until crisp and the cheese softens.
  10. Cut each quesadilla into wedges, spoon the roasted pepper salsa over, and scatter with the remaining cilantro.
