  1. Make the salsa first: in a bowl, stir the tomato, red onion, jalapeño, cilantro, half the lime juice and half the salt. Set aside.
  2. Toss the cabbage with the remaining half of the lime juice and set aside.
  3. Heat half the olive oil in a large skillet over medium-high heat. Add the yellow onion and green bell pepper and cook 6–7 minutes until charred at the edges. Move to a plate.
  4. Add the remaining half of the olive oil to the skillet. Add the chickpeas and cook 4 minutes, stirring now and then, until lightly crisp.
  5. Add the pinto beans, garlic, smoked paprika, cumin, oregano and the remaining half of the salt and cook 1 minute until fragrant.
  6. Pour in the water and roughly mash about half the beans with a fork or masher. Cook 2–3 minutes until thick, then fold the yellow onion and green pepper back in.
  7. Warm the flour tortillas in a second dry skillet about 30 seconds per side.
  8. Fill each tortilla with the bean mixture, the lime cabbage and the tomato salsa, then top with the feta and serve.
