- 8 oz220 gPart-skim mozzarellashredded
- ⅓ cup grated40 gGrated Parmesan
- ⅓ cup chopped20 gFresh parsleyfinely chopped
- 1½ tsp3 gLemon zest
- ½ tsp1 gCrushed red pepper
- ½ tsp1 gBlack pepper
Steps
- Make the dough: in a large bowl, whisk the bread flour, whole wheat flour, instant yeast, sugar and salt. Add the lukewarm water and mix until no dry bread flour or whole wheat flour remains. This is about 73% hydration and 2% salt.
- Cover and rest 15 minutes, then knead in the bowl with wet hands for 3 to 4 minutes until smoother. Cover and let rise at about 75°F (24°C) for 1 1/2 to 2 hours, until doubled in size.
- Make the garlic oil while the dough rises: warm half of the olive oil with the garlic and the rosemary in a small pan over low heat for 4 to 5 minutes, until the garlic is fragrant but not browned. Remove from the heat and stir in the red pepper flakes.
- Cook the mushrooms: heat one quarter of the olive oil in a large skillet over medium-high heat, add the mushrooms and black pepper, and cook 8 to 10 minutes until browned and their liquid has evaporated. Set aside.
- Oil two 10-inch cast-iron skillets or 9x13-inch pans with the remaining quarter of the olive oil, dividing it evenly between them.
- Divide the dough in half. Place one half in each pan, press it gently toward the edges, rest 10 minutes, then press again to fill the pans. Cover and proof at about 75°F (24°C) for 45 to 60 minutes, until puffy and it springs back slowly when poked.
- Preheat the oven to 475°F (245°C) with a rack in the lower third.
- Dimple each dough with your fingertips, then brush the garlic oil over both, using half of it per pizza, garlic and rosemary included.
- Scatter the mozzarella over both doughs to the edges, half on each, then top each with half of the mushrooms and sprinkle each with half of the Parmesan.
- Bake 15 to 18 minutes, until the cheese is bubbling, the edges are deep golden and crisp, and the crust reads about 205°F (96°C) in the center.
- Toss the parsley with the lemon zest. Run a spatula around each pan, slide the pizzas onto a rack and cool 5 minutes.
- Scatter the parsley and lemon zest mixture over both pizzas and cut each into 6 slices.
