- 1¼ tsp5 gVanilla extract
- ¾ cup chopped100 gWalnutstoasted and chopped
- ½ cup60 gPowdered sugar
- 1 tbsp (15 ml)15 gOrange juice
Steps
- Heat the oven to 400°F (200°C). Toss the butternut with 5 g of the canola oil (about 1 teaspoon) on a sheet pan and roast 30–35 minutes until very soft. Mash smoothly and cool 15 minutes; you should have about 1 2/3 cups.
- Meanwhile toast the walnuts on a small pan in the oven for 6–8 minutes until fragrant, cool, then chop.
- Lower the oven to 350°F (175°C). Grease a 9x5-inch loaf pan with a little of the remaining canola oil and line it with parchment.
- In a bowl, whisk the flour, baking soda, baking powder, salt, ground ginger, cardamom and nutmeg.
- In a large bowl, whisk the brown sugar, egg, the rest of the canola oil, the yogurt and the vanilla until smooth, then whisk in the mashed butternut.
- Fold the flour mixture into the butternut mixture just until no dry streaks remain, then fold in the walnuts.
- Scrape the batter into the pan and bake 60–65 minutes, until a toothpick in the center comes out clean.
- Cool in the pan 15 minutes, then lift onto a rack and cool completely, about 1 hour.
- Whisk the powdered sugar with the orange juice into a thick glaze, drizzle over the cooled loaf, let set 10 minutes, and cut into 12 slices.
