- 2 tsp8 gVanilla extract
- 2 tsp4 gLemon zest
- 2 cups250 gRaspberries
- 3½ tbsp packed50 gBrown sugar
- ¼ cup20 gUnsweetened cocoa powdersifted
- ½ tsp1 gGround cinnamon
- ⅓ cup60 gSemisweet chocolate chips
Steps
- Preheat the oven to 350°F (175°C). Brush a 9-inch square pan with a little of the melted butter and line it with parchment.
- Make the cocoa filling: in a small bowl, stir together the brown sugar, the unsweetened cocoa powder, the cinnamon and the chocolate chips. Set aside.
- In a medium bowl, whisk the flour, baking powder, baking soda and salt.
- In a large bowl, rub the lemon zest into the granulated sugar with your fingers until fragrant. Whisk in the rest of the melted butter, then the eggs one at a time, then the yogurt and vanilla until smooth.
- Fold the flour mixture into the wet mixture just until no dry streaks remain.
- Spread half of the batter in the pan. Scatter half of the raspberries over it, then sprinkle all of the cocoa filling evenly on top.
- Dollop the remaining half of the batter over the filling and gently spread to the edges. Press the remaining half of the raspberries lightly into the top.
- Bake 40 to 45 minutes, until the top is golden and a toothpick inserted into the cake (not a berry or chocolate pocket) comes out clean.
- Cool in the pan on a rack for at least 45 minutes so the filling sets, then lift out and cut into 12 slices.
