  • 2 tsp8 gVanilla extract
  • 1⅛ tsp5 gBaking soda
  • ¾ tsp3 gBaking powder
  • ½ tsp3 gSalt
  • ¾ tsp2 gGround cinnamon

Steps

  1. Heat the oven to 350°F (175°C) and line a 9x5-inch loaf pan with parchment.
  2. Spread the pecans on a baking sheet and toast in the oven for 6 to 8 minutes until fragrant; cool, then set aside one third for the topping and keep two thirds for the batter.
  3. Make the praline topping: stir the melted butter, 20 g of the brown sugar and half the maple syrup with the reserved third of the pecans; set aside.
  4. In a medium bowl, whisk the flour, baking soda, baking powder, salt and cinnamon.
  5. In a large bowl, whisk the mashed banana, the remaining brown sugar, the remaining half of the maple syrup, the canola oil, eggs, Greek yogurt and vanilla until smooth.
  6. Fold the flour mixture into the banana mixture until just a few dry streaks remain, then fold in the chocolate chips and the remaining two thirds of the pecans.
  7. Scrape the batter into the pan and scatter the praline topping evenly over it.
  8. Bake 60 to 65 minutes, tenting with foil after 40 minutes if the top darkens, until a toothpick in the center comes out clean.
  9. Cool in the pan 15 minutes, then lift onto a rack and cool at least 45 minutes before cutting into 12 slices.
