  • 2 medium240 gBananavery ripe, mashed
  • ½ cup130 gPeanut butter, no salt addedstirred well
  • 1 large50 gEggsat room temperature
  • ⅓ cup packed80 gBrown sugarpacked
  • 1 tbsp14 gCanola oilplus a little for the pan
  • 1¼ tsp5 gVanilla extract
  • 1⅛ tsp5 gBaking powder
  • ¾ tsp2 gGround cinnamon
  • ¼ tsp2 gSalt
  • ⅔ cup110 gSemisweet chocolate chipsdivided: three-quarters into the batter, one quarter on top
  • 3½ tbsp30 gDry-roasted peanuts, unsaltedroughly chopped

Steps

  1. Heat the oven to 350°F (175°C). Lightly brush an 8-inch square pan with a little of the canola oil and line it with parchment, leaving an overhang for lifting.
  2. In a large bowl, mash the banana until mostly smooth, then whisk in the peanut butter, egg, brown sugar, the remaining canola oil and the vanilla until glossy.
  3. In a second bowl, stir together the oats, baking powder, cinnamon and salt.
  4. Fold the oat mixture into the banana mixture until no dry oats remain, then fold in three-quarters of the chocolate chips.
  5. Spread the batter evenly in the pan and press it flat with a spatula. Scatter the remaining quarter of the chocolate chips and the chopped dry-roasted peanuts over the top and press them in lightly.
  6. Bake 25 to 28 minutes, until the edges are golden and a toothpick in the center comes out clean of wet batter (melted chocolate is fine).
  7. Cool in the pan on a rack for at least 40 minutes so the bars set, then lift out with the parchment and cut into 12 bars.
